python 3.7 Security Support Ends in 1 year and 4 months (27 Jun 2023). So current use 3.7 is OK.
deepin's python will update in deepin 23. which in nightly channel current.
As for Libreoffice and Mailspring, I think you can package and contribute to deepin community

deepin Libreoffice in the app store must be 7.1.x. I guess what you are using is the one from apt source. However, both of them are outdated. The version from deepin apt source is from debian10, so you'd better not change it. But the version from app store is package standalone. So you can package the newest version and upload it.
For flathub intergration, you can use flatpak through cli in deepin anyway, or use gnome-store as the gui
frontend. Using snap with snap-store is another choice.
