I'm not sure, would be nice to keep it rolling release for a while since it's new; I see a lot of changes happening and I don't want to have to re-install for the time being. What do you think?

Be "rolling release" could be appropriate to Deepin Project as soon as it became really stable..
Today, I'm sorry to say that it is not stable.
There are so many bug to correct and the distro need to be optimized.

I think it's so hard to roll back. Because most packages will delete the old version when it release a new version(not only just local system, but also the repo), maybe refresh the dependencies. So, when you upgrade your system, the old packages will be replaced by the new, and the old packages will also remove from the repo, there is no way to let you install the old version.
