Right click the dock brings up the menu to change Mode, Location, Size, and Status.

I'm sorry i phrased that a bit ambiguously. I'm aware of the options in the dock settings. I would like to know if it's possible to adjust the size beyond these standard settings.

Yes,that is possible but you have to manually change the registry.
First download dconf-Editor which is something like regedit for windows.
Open it and move to /com/deepin/dde/dock
Here you can modify all settings but be sure not to break anything.
