Removing recent files from file manager

Right-clicking on "recent" in the file manager brings up the option to remove.  Unless I'm misunderstanding what you're looking for.

When I right click the "remove" and "rename" are grayed out and I  can only click open, open in new tab or open in new window.

In Nautilus file manager you can right click the actual file and select Remove from Recent. To remove all do a  Ctrl + a to select all files then right click and select Remove from Recent.
